Ingredients
- 4 chicken thighs – bone in, skin on
- 2 tablespoons olive oil
- 1 small yellow onion – finely diced
- ½ cup sundried tomatoes – finely diced
- 3-5 garlic cloves – finely diced
- 1 cup chopped spinach
- 1 cup chicken stock
- ½ cup heavy cream
- ¼ cup parmesan cheese
- Salt and pepper to taste
- Fresh parsley or basil for garnish, optional
Preparation Method

Preheat a pan over medium high heat on Wolf Cooktop or Rangetop. Season the chicken thighs with salt and pepper. Add 1 tablespoon of oil to the pan and add the chicken thighs, skin side down. Sear for about 5 minutes, or until golden brown. Remove and set aside.

Add the remaining tablespoon of olive oil to the pan and add the diced onion. Saute for about 5 minutes, or until translucent and starting to caramelize. Add the garlic and sundried tomatoes. Continue to cook 1-2 minutes.

Add the spinach, chicken stock, heavy cream, and parmesan cheese. Stir until fully incorporated. Bring to a simmer and add the chicken thighs. Let simmer about 15- 20 minutes, or until the thighs are fully cooked.

Garnish with chopped basil or parsley, serve and enjoy!
